SERVES

INGREDIENTS:

  • 2 tbsp extra virgin olive oil

  • 2 filet cod (about 3-4 oz each filet)

  • 1 tsp ground cumin

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp garlic powder

  • 16 oz Sam's Fresh Medium Salsa

  • Fresh parsley or cilantro for garnish (if desired)

DIRECTIONS:

  1.       In a large skillet, heat the olive oil over medium heat

  2.       Pat cod dry with a paper towel and then season each side with cumin, salt, pepper and garlic powder

  3.       Once oil is warm, add cod filets and sear (without moving) for 1 minute on each side. Please note the fish is not cooked at this point, you are just browning.

  4.       Add Sam's Fresh Salsa, cover, and simmer fish until fully cooked (about 8 minutes, depending on the thickness of your fish). Fish will lightly flake with fork when cooked through or you can use thermometer to ensure fish is 145 degrees F.

  5.       Remove fish from pan, top with salsa and garnish with fresh parsley or cilantro.
