Gazpacho Verde

5-6 cups

INGREDIENTS:

  • 2 Cups Fresh Spinach

  • 2 Medium Avocados, Pitted and Chopped

  • 1 (12-Ounce) Container Sam's Fresh Salsa Verde, Divided

  • 1 Seedless English Cucumber, Roughly Chopped

  • 1/2 Cup Seedless Green Grapes

  • 1 - 2 Cups Cold Water

DIRECTIONS:

  1. Measure out 1/3 cup of the salsa and set aside. Place the remainder in your blender along with the spinach, avocados, cucumber, grapes, and 1 cup of cold water. Process until smooth, adding more water if necessary until the mixture reaches your desired consistency.

  2. Pour into bowls and top with dollops of the reserved salsa, swirling it lightly into the top. Serve right away.

NOTES:

  • Stored in an airtight container in the fridge, this soup will keep for up to three days, but will turn a bit darker brown over time.
